yummy goodness

last night i made the perfect meal for the first san francisco cold winter rain, macaroni & cheese. i'm not talking about the stuff in the blue box, but homemade, stir up some white sauce, mac & cheese.

homemade macaroni & cheese is one of those foods that always makes me feel good & reminds me of being a kid. my mom is a great cook & we were exposed to a lot of different foods like curried shrimp & sauerkraut (not together!) but i think one of my all time favorites is her macaroni & cheese. i can picture my brother, sister & i sitting at the counter of the kitchen in the house we grew up eating it. perhaps that's why i feel so good when i take the time to make it. of course i do things a little differently than she did for us kids. i use cheeses like gruyere and blue cheese instead of velveeta. i add carmelized onions instead of minced onion flakes. plus I think she would have had a mutiny if we had seen cherry tomatoes in our mac & cheese. But the spirit is still the same even if the flavors are a little more grown up.

and of course i served it with the only suitable side dish, frozen peas.

what foods make you feel really good & reminded of home?

  1. Mmmmmmmm, that looks soooo good! Macaroni and cheese is a definite comfort food. My comfort food of choice?? Good old fashioned beef stew with dumplings. The broth has to be more like gravy than broth. Yum!

  3. Pancakes for dinner! When I was a kid, and my mom was too tired to cook, she would make me pancakes. I never complained!
The best is to put strawberry jam on it and then roll it up. Yummy!

I love that you're blogging every day! Keep it up :)

My mother is coming up to Eugene to see my show in two weeks. I could not be more excited -- my first big college production, family visiting, AND my mom has agreed to cook a big dinner for me and about ten of my friends. Everyone from home loves my mother's cooking, so I am thrilled that I get to show her and her food off to my school friends.

The problem is, my friends at school are picky eaters, whereas my friends in San Francisco will eat anything my mother places in front of them. Here we've got vegetarians, no beef, no pork, no spicy food, no tomatos, no this, no that, no the other thing. I really want my mom to make macaroni and cheese (she usually takes about five cheeses and mixes them together - so good! - or last time, we had feta cheese and crushed kalamata olives), but one of my friends only likes mac and cheese from the box. Oh well.

So now I'm thinking risotto with either asparagus or brocolli. I'd love to have it with chicken, but one of my friends is vegetarian. Just one! I'm so tempted to ask her to pick out the meat, but I'm not that cruel.

Anyway, home is really random versions of mac and cheese or risotto, which is probably why I'm asking my mom to make it here.

  5. My family's comfort food of choice was having a German pancake for dinner, with powdered sugar and syrup, and maybe some fruit. So easy, yet so decadent! Your mac & cheese looks absolutely scrumptious, I might have to give that a try.
